Founded in Montreal in 1979, Adonis is a well-known food retailer specializing in Mediterranean products. In addition to traditional grocery aisles, Adonis supermarkets offer freshly cooked hot and grilled food from expansive kitchens. To ensure the new flagship store in Mississauga met the variable demands of its operations, we worked closely with McGreger Allsop Engineering to recommend a state-of-the-art kitchen ventilation solution that prioritized energy efficiency and comfort.

Challenges

The primary challenges for this project included:

  • Designing a kitchen ventilation system that could adapt to the variable demands of multiple cooking operations.
  • Enhancing energy efficiency while maintaining comfort for staff and customers.
  • Ensuring compliance with all relevant regulations and standards.

The Solution

Our solution featured a fully integrated Demand Control Kitchen Ventilation (DCKV) system serving three kitchens, which included:

  • Hood Systems:
    • Six Type 1 Dynaflow high-efficiency hoods.
    • Two Type 2 Condensate hoods.
  • Exhaust and Airflow Control:
    • Four PennBarry roof exhaust fans.
    • ULC Zoneflow exhaust dampers (manual) on each hood.
    • ULC Zoneflow supply dampers (modulating) to control airflow to each kitchen on demand.
  • Make-Up Air System:
    • Valent VPR 310 Make-up Air (MUA) Unit featuring:
      • Direct-drive plenum supply fans with variable frequency drives (VFD).
      • Indirect fired heat with a 10:1 turndown ratio.
      • 25-ton integrated DX cooling system.
      • Digital scroll lead compressors and active head pressure control.
      • Standalone control with Building Automation System (BAS) monitoring of temperatures and status.
      • An integral web page user interface (standard in all Valent units).

This successful project achieved remarkable efficiency by providing separate controls for each kitchen, allowing systems to remain off when not in use. With a single MUA, the TruFlow panel managed the outdoor air delivered to each space using modulating supply dampers. A control signal to the Valent MUA modulated supply air volume to optimize energy reduction. Additionally, the gas heat and integral cooling in the Valent MUA ensured that conditioned air was supplied to each space, enhancing overall comfort.

Conclusion

Our collaboration with McGreger Allsop Engineering led to the successful implementation of an advanced kitchen ventilation solution at Adonis’s new flagship store in Mississauga. The system not only met the varying demands of the kitchens but also promoted energy efficiency and comfort, reinforcing Adonis’s commitment to quality and customer satisfaction.
